Include [[Customer Email Address]] as a dynamic variable

In the email template (when a customer redeems a reward) is it possible to include [[Customer Email Address]] as a dynamic variable? The reason I need this, is because I need to know the redeemer's email address to send follow-up email to him, and it will be more convenient if this info is available in the email that's also copied to me. I can look up the person's email address using the Gratisfaction admin page, but that's less convenient.
